    • Ingredients:
      • 1 cup quinoa
      • 2 cups water
      • 1 can (15 ounces) black beans, rinsed and drained
      • 1 can (15 ounces) corn, drained
      • 1 avocado, peeled and diced
      • 1/2 cup chopped red onion
      • 1/4 cup chopped cilantro
      • 1/4 cup lime juice
      • 1/4 cup olive oil
      • Salt and pepper to taste
    • Instructions:
      • Rinse quinoa in a fine-mesh sieve.
      • In a medium saucepan, combine quinoa and water.
      • Bring to a boil over high heat.
      • Reduce heat to low, cover, and simmer for 15-20 minutes, or until all water has been absorbed.
      • While quinoa is cooking, prepare the salad. In a large bowl, combine black beans, corn, avocado, red onion, cilantro, lime juice, and olive oil.
      • Season with salt and pepper to taste.
      • Once quinoa is cooked, fluff with a fork and add to the salad bowl.
      • Stir well to combine.
  • Lentil Soup
    • Ingredients:
      • 1 cup dried lentils
      • 6 cups water
      • 1 onion, chopped
      • 2 carrots, chopped
      • 2 celery stalks, chopped
      • 2 cloves garlic, minced
      • 1 teaspoon dried thyme
      • 1 teaspoon dried oregano
      • 1 bay leaf
      • Salt and pepper to taste
    • Instructions:
      • Rinse lentils in a fine-mesh sieve.
      • In a large pot or Dutch oven, combine lentils, water, onion, carrots, celery, garlic, thyme, oregano, bay leaf, salt, and pepper.
      • Bring to a boil over high heat.
      • Reduce heat to low, cover, and simmer for 30-45 minutes, or until lentils are tender.
      • Remove bay leaf.
      • Serve lentil soup warm.
